Services provide core operating system tool functionality to the PC. Such processes are often directly affiliated with Windows and are vital for proper initialization and operation of the system. However, third party applications may install other services that you may not need or require, thereby slowing system startup while soaking system resources.
A good example is the Automatic Update service. If you enable automatic updating, this service constantly runs in the background, and periodically connects to Microsoft to seek new updates and patches. When found, the service either notifies you or it automatically downloads and installs the updates, depending on your system configuration.
